Muscovado sugar: Tips for using & Substitutes

 Sugar stores shelves stock with white granulating like sugar, brown sugar, turbinado, demerara, and muscovado. 

‌All sugar comes from sugar cane or sugar beets. Different types are made by adjusting processes like cleaning, crystallizing, or drying the juice from sugar cane or sugar beet plants. 

It makes it granulating sugar; all the natural molasses are removed during the refining process. For brown sugar, some molasses is added back for color and flavor.

What is Muscovado Sugar?

It is also called Barbados sugar, Khan sari, or Khand. Muscovado, mainly in India, Colombia, and the West Indies, is the top producer in India.

Unlike granulate and brown sugars, muscovado sugar is an unrefined or “raw” sugar. Meaning the molasses has not been removed. It is made only from sugar cane. Cane extract is heating, and then the liquid is allowing to evaporate until the sugar residue remains.

Muscovado sugar is a darker brown than brown sugar and has a strong molasses flavor. The crystals were coarser than brown sugar and giving it the wet sand’s texture.‌

It is sometimes described as having a more complex and earthy flavor than granulated sugar, with hints of toffee and a smoky after the taste.

We will find two types of muscovado sugar in stores like Light and Dark. Light muscovado has some of its molasses remove. Dark is a very dark brown sugar, and it is almost black. 

Is Muscovado Sugar healthy?

Minerals: Unlike granulating sugar, muscovado sugar does not go through a moving process. Nutrients and trace minerals are calcium, manganese, potassium, and magnesium not lost manufacture.

Antioxidants: Because it has more molasses than many other types of sugars, it holds on to some of the antioxidant properties of molasses. Antioxidants help to fight the cell damage causing by free radicals. The damage will otherwise contribute to aging and illnesses like heart disease.

Added sugar : Muscovado sugar will slightly better for one than white sugar because of its minerals and antioxidant properties. But it is still adding sugar. The body digests these more quickly than the natural sugar in fruits that also has fiber and minerals.

Regularly consuming adding sugars makes the body’s blood sugar level spike again and again. It is leading to insulin resistance and raises the risk of different health problems.

American Heart Association is recommending that women get no more than 100 calories. Six teaspoons of adding sugar and men no more than 150 calories are nine teaspoons of adding sugar each day. 

For example, one twelve-ounce cola has 10¼ teaspoons of sugar, and orange soda has thirteen teaspoons.

The bottom line is although muscovado sugar will become slightly more nutritious than granulated sugar and it’s still sugar. Overeating sugar raises the risk of conditions like obesity, heart disease, and type 2 diabetes.

Tips for Using Muscovado Sugar

Can use Muscovado sugar in a variety of ways, both sweet and savory:

1. Replace regular sugar in the coffee or chai. Because it has a more robust flavor, one will not need to use it as much.

2. Use in place of brown sugar when making barbeque sauce.

3. Make a muscovado glaze for ham by simmering muscovado, water, ginger, a cinnamon stick, star anise, cloves, and fennel seeds.

4. Make use of its molasses flavor in gingerbread and ginger cookies. 

5. Pair it with chocolate in recipes like chocolate cake and brownies.

6. Use it to sweeten the oatmeal for a richer flavor.

7. Making toffee or caramel with the sugar.

Careful when using muscovado in place of regular sugar in baking goods. It needs a careful balance and exact amounts. It has more moisture than regular sugar and will make some recipes too wet.

Store muscovado sugar in an airtight container or bag to keeping it from drying out. 

Substitutes for Muscovado Sugar

If you can’t find muscovado, other unrefined sugars may be suitable substitutes. These are jaggery, panela, and coconut sugar and also use Dark brown sugar. But it has a more delicate texture, less flavor, and lower molasses content.
